Coconut Cashew Bites

I ate a particularly delicious energy bar the other day that I picked up at the mini-grocery store across from my office. It was so good that I saved the wrapper so I could look at the ingredients and recreate it myself. I think my version is almost better than the original. Here is the recipe. I didn't measure anything, just put in amounts that seemed right.

Put in blender and blend until powdery:
Flax seeds
Shredded coconut
Raw cashews
Raw almonds

Whole dates - chop these into small pieces

Add the dry powder to the dates and work it together with your hands. I needed to add a few drops of water to make it all stick together. Once you have a big ball, make it into bite-size pieces or bars, or whatever shape works for you.

Done. Paleo and vegan! Raw! Super delicious!  but.... not low calorie, discipline required.
